Read 100% correctly

All the flour starts in the biga; not all the water does.

A 100% biga places every gram of recipe flour into the preferment. It does not mean equal flour and water: this biga contains water equal to 45% of its flour weight.

The finished dough targets 66% hydration, so the calculator holds back the difference for the final mix.

Break up and incorporate the stiff preferment using the chosen method; it will not dissolve like poolish.

Biga hydration becomes the dough target

The 45% setting describes stage one only. The final dough reaches its separate hydration later.

The flour share changes without checking water

A wetter or larger preferment can consume more water than the finished formula allows.

Preferment choice

Choose biga for a stiff first stage, poolish for a liquid one.

Both reserve fermentation for stage one, but distribute water differently. Poolish begins with equal flour and water; this biga begins with all flour and less than half its weight in water.
